When the laptops close, the embers come on. An after-hours room built around two ingredients: smoke, and agave.
At 17:00 the workday upstairs ends, and the same building exhales into something else entirely. A low-lit terrace, a wood-fired kitchen running at full draw, and a back bar lined with the most serious agave collection on the island. Tex-Mex done with restraint and respect — primal on the plate, refined in the glass.
Every plate from the fire has a companion behind the bar. Our maestros guide the table — order one of each and you'll never order off-menu again.

Humo & Agave doesn't open cold. We open the kitchen to a small, hand-picked room first — press, peers, neighbors, the people who built the place — before anyone pays for a meal. By the time the public sits down, every plate has been served a hundred times.

The Opening List is how we cast the room for every night of launch week. A small number of names are invited to the private tastings (Aug 1–5). The next fifty are invited to opening night (Aug 7). The first to book are seated at the Founders' Table (Aug 8–9). Then the doors open to all.
