Café Manager & Working Chef
Own the café programme — menu, kitchen, daytime service. Working chef-manager, not a desk role. Health-focused cooking.
Café Strata is the ground-floor café of Strata House — the most discerning daily-life audience on Koh Samui. You will design the menu, run the line, manage food cost and waste, and supervise the floating staff during café hours. You report to the General Manager and you hold a vertical commission on café revenue. This is a working chef-manager role; expect to be in the kitchen, not behind a desk.
- Design and execute the menu — seasonal, health-focused, sourced locally where possible.
- Run the kitchen during service. Supervise floating staff deployed to the café.
- Own food cost, waste, pars and supplier relationships for café inputs.
- Daily briefings, prep standards, plating consistency.
- Thai national, 25–40. Working chef-manager experience in café or all-day dining.
- Health-focused or specialty kitchen background preferred.
- Basic English sufficient — fluency is a plus.
- Calm during service. Leads by standard.
+ 3% of café gross revenue (monthly) · base rises to 30,000 THB on revenue KPI (12-month review)
3-month probation at 23,000 THB; written confirmation at month 3 triggers the confirmed salary. Vertical commission paid from month 1 — no probation delay. Plus phantom equity (0.5% of the 5% reserved pool) — eligible after 12 months, 3-year vest.
